It was the perfect start-up for us because included in the monthly rent was a commercial kitchen full of ALMOST all the equipment/appliances that we need to open. We signed a one year lease in the old snack shop location. SMOQEHOUSE will be located in the Faribo West Mall. Then you will leave, tell all your friends, and come back again! There will be garbage recepticles located near the doors where you will throw/recycle your trash and be on your way. When your order is ready, we will call your name and you can come grab it (it wont be a long walk, we promise)! Expect ticket times to vary between 3-7 minutes depending on your order and time of day. Once you have ordered, you can pick up your condiments, if needed, grab your soda, and find a seat. When you are all set, head up to the ordering counter where we will help you out. We will have a large menu board where all current menu items and specials will be listed. When you come in, expect to be greeted by Andy and/or me. SMOQEHOUSE will be a very small, cozy joint featuring raw and industrial looking decor. This will allow us to bring in craft beer, local hard ciders, and other malt beverages. See below for a sample of our menu. We will be serving Coke products via our self-serve fountain system and also hope to open with a BEER ONLY license (you're shocked right?!). Sides will be a la carte allowing you to customize your meal to your hunger level and what you're in the mood for. Think food truck but less mobile! We will have a very small menu (five items) with rotating daily specials to keep things fresh, seasonal, and to spark his creativity. It is a fast casual eatery featuring hand crafted sandwiches, salads, soups, and whatever else he might feel like making that day. SMOQEHOUSE is a concept that has evolved over years in the industry. Cooking is truly his passion and it is time someone else benefits from his amazing talents besides me! He has an extensive collection of cookbooks, has maxed out our DVR with Food Network shows and our utensil drawers (yes- plural) are bursting at the seams with every gadget imaginable. This guy eats, sleeps, and breathes food. It's time for him to switch things up a bit and dive into his real obsession, FOOD. He has developed cocktail programs, managed, and met some amazing people along the way. Most of you are used to seeing him behind the bar slinging beers and mixing some of the best cocktails around. Andy Kubes is the mastermind owner/operator behind SMOQEHOUSE, but every mastermind has a sidekick.that's me! He has been working in the restaurant biz here in Faribault for nearly 20 years, starting as a busser and working his way up through pretty much every position/role there is.
